1 lb top sirloin (super tender) or beef round (more economical), sliced thinly against the grain
1 Tbs. salt*
Slice beef thinly against the grain and rub well with salt and allow to marinate in the fridge covered for about 30 min-1 hour.
Arrange the beef slices on a baking sheet or on your dehydrator sheets (if using a dehydrator). Also a cooking cooling rack set on top of a baking sheet and placed in the oven can work well and improves the air circulation and cuts drying time.
If using a dehydrator, set to about 155F and allow to dehydrate about 10 hours, check for residual moisture, and continue to dehydrate until totally dry and crispy.
*This is a basic recipe for jerky made in a dehydrator. It can also be made in an oven on the lowest temperature setting (about 200F) with the door left cracked open. The oven method can take up to 24 hours. You can use a variety of spices and liquids to marinate the jerky before dehydrating it, so get creative!
