Mashed Cauliflower with Garlic Confit and Ghee

2 heads cauliflower, washed and cut into large pieces

2 Tbs. ghee

½ teaspoon celtic sea salt

2 Tbs. garlic confit (or about 6 cloves)



Steam the cauliflower pieces until very tender

Puree cauliflower in a food processor add in ghee, salt, and garlic

Reheat in a casserole dish in the oven at 350° for 20 minutes
